My current obsession with one-pot meals has led me to another absolute winner! I’ve made peanut sauces before, but this delivered the perfect level of peanut buttery richness without overpowering the other flavors. Thanks Recipe Runner for putting together such a scrumptious dish! This didn’t end up being a true one-pot meal for me because I decided to use the remaining coconut milk to make coconut rice – totally worth the extra dish to wash!
I did make a few changes – I used soy sauce instead of fish sauce and used about 3/4 cup of full-fat coconut milk instead of 1/2 cup of lite coconut milk.
I also chose to par-cook the sweet potato in a slightly different way since I’m not a huge fan of using cling wrap in the microwave. I simply poked a fork into the sweet potato a dozen times and then wrapped it in a wet paper towel. I microwaved it for about 10 minutes, which in the end was way too long and much of my sweet potato disappeared into the sauce when I combined it all together. I’ll probably try about 6 minutes next time so that the pretty little cubes don’t melt away into the sauce.
